Dead Space remake was amazing and was superior to the original in every way.

MGS3 with a shinier coat of paint and better controls isn’t really enough to justify the price tag for me, not when I’ve already got it on 360. Best comparison for me is with the Medieval remake. I think you could absolutely make Snake Eater again but it would likely be more open-world focused.
